Gold Medal Cafe Recipe: Instant-Pot Pulled Pork

Ingredients


2 lbs. pork loin, shoulder or butt (in the order of leanness)

1 TBSP oil

½ bottle BBQ sauce (16-18 oz bottle)

Pinches of salt and pepper


Optional:
  • 1 TBSP smoked paprika
  • 1 TSP garlic powder
  • Hot sauce

Green beans and potatoes
  • 2 cups green beans, trimmed
  • 2 medium-large size sweet potatoes
  • 1 TBSP oil
  • Salt to taste

Step-by-Step Instructions


1. Season both sides of pork with salt and pepper (optional – garlic powder and smoked paprika)


2. Turn on an Instant Pot to the “Sauté” setting. Add oil and warm up


3. Place seasoned pork in heated Instant Pot, sear both sides for 1-2 minutes


4. Turn off the “Sauté” setting and pour in BBQ sauce. Close the lid, turn the valve on vent, and press the “Slow Cook” button on the Instant Pot. Cook for 6-8 hours.


5. Once done, shred with two forks. Add more BBQ sauce as desired.

6. Preheat oven to 400ºF. Cut sweet potatoes into halves. Take off tips and place them on a baking sheet for 30 minutes.
